Blood sausage, or black pudding as it is called is made from pig's blood, chopped pork fat, salt, spices and sometimes barley. The blood is boiled with the spices until it thickens and then mixed with the fat. Depending on the recipe, it can be anything from dry and powdery, to moist and soft. It can be sliced and eaten uncooked (it's already been cooked once) or fried or grilled.

Despite how horrible it sounds, good black pudding can be wonderful - the fat is chopped finely and there isn't too much of it. The best black pudding is also a bit peppery too and should be moist inside after it is fried or grilled.

The worst black pudding is the dry and powdery sort with huge lumps of fat. Horrible!

Chicken porridge I have never heard of but I have heard of meat porridge. That is minced (or ground) beef or lamb that is fried with onions and then meat stock and oatmeal is added and it is cooked to the thickness of normal porridge. I only ever had it once and it was with minced lamb. The taste reminded me a 'little' of haggis. It wasn't the most exciting thing I ever ate and it was rather greasy. I think I would have prefered it with ground beef and the addition of some carrots and green cabbage.

I actually use oatmeal as a thickener for stews and hotpots. It's nicer than flour or cornflour and it's much better for you, seeing as it reduces cholesterol. It also makes a good winter stew more filling and as porridge oats releases energy gradually, it actually makes for great cold weather food.

Blood sausage simply incorporates the blood from the animal (pork) and it congeals. Gross. I don't know about the porridge but it seems self-explanatory. Overcooked peas or meal with chicken.

i think the blood saugage, is made from pigs blood, you see it in the shops as Black Pudding, you have it fried , and its not as bad as it sounds, I will leave the Chicken porridge for someone else, i never heard of it
