ONLY last years canes that bore fruit this year needs to be cut away leaving all the new canes that grew this year
the canes that grow this year are the ones that will bear fruit next year

the leaves shrivel and die .. if you have enuff wind then yes they fall off

i have fall bearing raspberry bushes. i cut all canes to the ground this past spring & i had a multitude of berries this summer. i now have twice as many berries coming for the fall. do not cut the canes down in the fall. the remaining branches will catch blowing leaves which will act as an insulation blanket during the winter.

Just to confuse you even further....there are two types of raspberry canes - summer fruiting and autumn fruiting.
Summer fruiting - these fruit on wood produced the previous year so remove all canes that have fruited during the season, also cut out any weak new canes leaving three or four canes per plant. Tie in the new canes to your supporting wires, don't cut off the tops of any that have grown extra tall just bend them over and tie them in.
Autumn fruiting - these fruit on wood produced the same year so simply cut everything down in early spring and as the canes regrow tie them in.

They lose their leaves and regrow. With some varieties the canes which produced this year will die by now (late August). There are other canes which grew this Spring which will overwinter and produce next summer.

The leaves will fall off in winter, but in the spring, they will get leaves and hopefully, in the summer, lots of berries.

After fruit, all the leaves die off and the canes go brown. Cut it all back to the ground in the autumn then just wait!
