Try ripcord, it helped my on my project:

remember though, if your project requires it to be a certain size, that you will have to adjust all the measurements.
If that doesn't work for you, just yahoo or google 'trebuchet plans' and you'll probably find something

I believe sca.org has a link for plans to build one. Their instructions are usually pretty good.

2 triangles on a hexagon (i think cant rember) put the sling in the middle and a latch a on one end
