Can anyone recommend a good place to buy very large canisters? Is there some kind of chain of stores that supplies restaurants, etc.? I'm in southeast Michigan.

I would think for long-term health, etc. glass would be better...

You have to be very careful storing flour for a long time because it will get weavils in it . I store my flour in the refrigerator to prevent this . The weavels are in the flour when it is packaged and cool won;t let them hatch . Good luck on your search

I keep my flour in the freezer, just in the bag it comes in. Not as pretty as a canister, but hey no bugs. When I need to use it I just take it out and it's ready. It lasts a really long time this way.

As for containers try this place(link below) I have window shopped but never ordered so I can't say how they are, but they have awesome storage and containers!

Get Tupperware or Rubbermail plastic containers.
They seal very tightly. Better than any SS container seal.
And lighter to lug around.

Glass/ ceramic flour containers....well I've broken them moving around to get to the back of cabinets....

Either is fine;-} you want damp-proof.
I'd prefer glass so I can see the contents.
But steel bins can be labelled.
I just get the plastic ones from the dollar store.
