Tuna Casserole is by far the easiest to make. I love lasagna, but it is a hard one to do (freezes very well in portions, so make lots of it when you make it), and all sorts of Mexican casseroles are great. I actually like casseroles more than meat and potatoes. Chile, although not really a casserole, also is easy to make in very large amounts, freeze out in freezer bags and instant dinner!

Tuna casserole. And in fact, I made that for supper tonight. I make it slightly different from most in that I also add browned bacon, zucchini and celery to the usual onion and garlic. And I sprinkle the top with a mix of grated white old cheddar, asiago and parmesan cheese. I make the casserole in a turkey roaster in order to serve all seven people in this house, and have leftovers for the next day.

I make several casserole dishes but my favorite is a cheesy tuna pasta casserole with cheese and tiny English peas.

Tamale Pie, or a casserole with rice, hamburger, and shredded cabbage and tomato sauce, with spices. My quick way of doing stuffed cabbage, if I don't want to take the time.
