The unusual physical properties of "glurch slime," if I correctly understand it to be a substance similar to the toy that Nickelodeon marketed under the name "Gak" when I was a kid, can be summed up with one, highly technical word: "viscoelasticity." It can also be described as a non-Newtonian fluid. What this means is that it does not behave in a linear fashion in response to loading; the rate at which shear is applied has an effect on the shear response. Such a substance can be used to measure shear effects, and might have some applications as a sealant.
