We talk of dollars and pounds so why do some people say e.g. twenty-five euro instead of twenty-five euros? The plural in English is usually formed by adding an s so why not with this word?

Good observation...But according to the dictionary, there are two plural forms. Both "euro" and "euros" are correct.

But I prefer the usage of "euros". Americans use dollar (singular) and dollars (plural) so it makes sense for euro (singular) to be euros (plural).

Maybe they consider it can be used both ways -- either way is correct.
