Michael Caine has probably said "Not a lot of people know that" many times and anyway has published a book with that name so the link still holds. If it was started somewhere it was by Peter Sellers, who said he was always quoting from the Guiness Book of Records.
Most of the real people say things that haven't been recorded as saying in Shakespeare-Henry V probably never said "Once more until the breach dear friends, once more."
Greta Garbo protested that she never said "I want to be alone." She did in fact, it's a quote from one of her films.

Many people think that Alec Guinness said May the Force be with you in Star Wars: A New Hope. He didnt. The closest he said to it was "The Force will be with you always". In fact Alec Guiness never says that line in the trilogy
BTW in the first film, it was Han Solo who said it.
Another Star Wars fact: Darth Vader never says "Luke, I am your father." It's "No I am your father"

"Play it again Sam" wasn't in Casablanca
Elvis DIDN'T say "the only thing a n****r can do is buy my albums and clean my shoes"
Marie Antoinette apparently did NOT say "let them eat cake"
Mariah Carey DIDN'T say she envied starving Africans for being thin
Lauryn Hill didn't say that she'd "rather see her children starve than have a white person buy her albums"
Sherlock Holmes NEVER SAID "elementary my dear Watson" (the exact phrase, that is)
Those are the only ones I can think of

Greta Garbo never said 'I want to be alone'. - not in her films anyway.
Bogart in fact said 'Play it Sam, play it again. (Ta Ra).
The wicked Queen never said 'Mirror mirror on the wall'. What she actually said was 'Magic mirror on the wall' (in Snow white and the 7 dwarves at least).
'We have ways of making you talk' was actually said as 'We have ways of making men talk' (lives of the bengal lancers)
