It's called a "happy trail" because if you follow the "trail" on a guy...he will be happy, if you get what I'm saying ;)

Because it wouldn't make any sense for Roy and Dale to sing "Emotionally Disturbed Trails to you, until we meet again..."

I believe that "happy" is used here in the older sense, meaning "fortunate" or "lucky."
