How much boost can the stock Cummins reliably handle? How about the Duramax? I am well aware there is more to consider, but just looking for a simple number in this case. Basically for both, i jus tneed to know when to replace studs, gaskets, injectors, etc... thanks!

Which year Cummins are you asking about? I going to assume you're asking about the 03+ Common rails. There are many, many people running way over 40psi on the stock gasket and studs. I have run as much as 55psi on mine with an Industrial Injection Silver Bullet charger and my gasket and studs are stock. Many will agree that you are pushing your luck when you get over 45, 50 psi or so. I think that in most cases you will be fine, as I know of guys that have run about 60psi on the stock gasket and studs for nearly 100k. If you want things to last, let the engine warm up properly before you run high boost levels.
As for the Duramax, that I am not sure about. You can get a definitive answer for the Duramax on a forum, which I will list below.

In both cases please seek the advice of the diesel tuners. The cummings with a manual trans can handle mega boost because the manual transmission. But as soon as you make over 600# ft torque with an automatic transmission you better have that truck in the shop for a hot rod transmission rebuild. And more cooling. Get gear box and power upgrades at the same time.

A cummins is a medium duty diesel, while powerstroke and duramax are both light duty diesels. The cummins can take more.
