We'll first presume you have had a high school education that sufficiently prepared you for university in general.

The MCAT is only concerned with coursework typical university student would complete in their first two years. There is no upper-division material on the MCAT.

So, if you want to be prepped for the MCAT, here's what you need to finish:

1. General biology
2. Introductory physics (Newtonian mechanics, E&M, optics -- with minimal calculus)
3. General chemistry
4. Organic chemistry

And god help you, you better know how to critically analyze a piece of text. The verbal section is a beast!

I took the test on paper, so I don't know how the essay is structured these days. When I did it, it was 2 3-para essays, 30 minutes each.

Lastly, be well-rounded. Get into the habit of reading newspapers NOW. Register on the NY Times site http://www.nytimes.com (it's free!) and read the important stuff everyday. Wall Street Journal is great, too. Know cultural references (classical, erudite, and even POPULAR!). Cultural literacy is important for your verbal and essay portions of the exam.
