If it is an organized pot luck, I bring what I'm assigned. If not I bring a main dish of some kind as most people bring desserts and you end up with a dessert fest instead of a meal.

Something awesome like cheesy Hashbrown Casserole. Usually whatever I bring is gone before I get up to the food, so I know it had to be good.

Usually some type of appetizer. I have many recipes for all kinds of appetizers and enjoy making them (instead of a one dish meal), so I'd pick something like shrimp dip, seven layer taco salad, beef roll-ups, crab dip, etc.
