If the universe if infinite does that mean that all possibilities and variations become not only possible but certain..

for example another me on another planet virtually identical to earth but living in the house next door, or a planet where french is the official language of china

The universe is not infinite. Infinity is a valid mathamatical concept, but can't be used to indicate an actuality (like the universe, which is the total of all that exists) only a potential, like a number series. What exists is finite.

Aristotle discussed this and concluded that the actual is always finite.

What is 'outside' the universe if the universe if finite? The question is invalid. 'Outside the universe' has no referent. The universe is everything. There is no 'outside'.

But you could write yet another science fiction book.

Infinite is related to extension not possibilities, as the known Universe -this one- is bound by unbreakable laws that keep it coherent and chaos held at bay or only ocurring in a subatomical scale.
Parallel would be the supposition that there exist a number (from 2 to N) closely related universes which vary little from one to the next but greatly as they are distant from a relative standpoint but still seem to uphold a common set of laws.
Language would be least of your philosophical worries, as a parallel universe could be one where outer space is made of sugar and we spake in silica fumes. Like now!

There are several senses of the world infinite. You talk infinite in the mathematical sense, when all possibilities can happen. In the case of the universe, it may be infinite as the number of grains of sand of the earth, as in uncountable. I am sure that no grain of sand is identical to another. By the same reasoning, I am sure there is no parallel earth.

Well not exactly because this world is not exactly infinite. Though their are innumerable planetary systems in this material world, but these worlds are of Maya Illusion. The eternal world is Unlimited and exceeds the size of all created worlds put together and can not be measured because it is unlimited.
We are not this material body, IE; Race, color, nationality, Religion, mind, intellect, senses, job, etc. That is all based on illusion. We are all eternal spirit souls, part and parcel of the Supreme Soul, also known as Krishna, Allah, Jehovah, Vishnu, etc. We never die, only this mortal body dies. We have all the qualities of God but never in the same quantity.
This material world is not our real home, it is called Maya (illusion) and is temporary and full of misery, only one fourth of the souls come here,(the less intelligent ones) and the rest are enjoying blissful eternal loving relationships with our Maker named above. Those who are intelligent, take up the process of self realization (Bhakti Yoga) which gives one real peace, happiness and reality. Then at the end of life they can return to the eternal Kingdom where there is no more birth, death, old age, or disease and be eternally happy. Lets give up all of these illusory ideas and seek out the Highest Truth.

Universe is NOT infinite. It is impossible to reach its end though - because it is still growing.

i think in an infinite/parallel universe, not only is everything possible, it is more then likely probable as well. given the amount of space (infinite) the probablity of ANYTHING happening is there and is a realistic probability.

for instance, you can say that x could only happen if a,b,c,d,e,z,y happen (in that order) and you are given an infinite amount chances for that to happen, then your chances are great (even if it was a 1 - 999999999999999999999999 chance of happening in the first place). To say that it isnt a probabilty or even possible for anything to happen would be to put a cap on inifinite, which in and of itself is a paradox and cant happen. infinite space = inifite amount of chances for it to happen.

We are like fish in a pond who can only see the rim of the water and the rim of what encases us. As we know, there is so much more in the world outside of the pond.
