Drive into the mountains and head to Durango, Colorado. There, get tickets for the old-fashioned train ride up to Silverton, Colorado. Once you're up there, you can walk around for a bit before the train leaves. Get something to eat and check out the many little shops. Silverton is cute; it's this old-fashioned mining town. Silver was big there, as the name indicates. It's a great way to see some AMAZING scenery with someone you care about. Just make sure to get seats in a closed car if you do that, trust me. You'll get all black and sooty if you have an outdoor car. I had tons of fun doing that with my family. :)

Depending on when you're here, the Taste of Colorado is an awesome place to go. It takes place in downtown Denver Saturday, Sunday, and Monday, labor day weekend. I'm not sure about Friday, but I'm heading over there on Monday. They have tons of stuff to browse through and good food and stuff.
You can head up to mountain towns like Breckinridge without skiing. That's one of my favoritie places to go, and I never ski. Aspen and Vail are nice to check out too.
The Denver Zoo is really cute, and it's right next to the Denver Museum of Natural History, which has a pretty cool Titanic exhibit going on right now. There's tons to do around here, so just hang out and have fun. I'm sure you'll find something!

There are tons of things to do in CO all year 'round. You don't have to be a skier or even a winter person!
If you decide to go to Durango and ride the train, I suggest riding the bus one way, either up or down as the train goes up and back on the same track. But the road goes in another area and is higher and you actually get to see more.
You can also spend time in the I-70 corridor, but depending on the time of year, it can be more of a traffic headache than it is worth.

A wonderful place to visit in the winter is Rocky Mountain National Park - gorgeous area, lots of wildlife, beautiful vistas, and fairly deserted - very romantic! My husband and I were married a beautiful place in Estes Park called Romantic Riversong - it's a B&B that caters to couples, and it would be perfect for a milestone anniversary (www.romanticriversong.com). We return every year in February to celebrate our anniversary. Nothing like cuddling in front of a cozy fire with the snow coming down outside! There are other nice places to stay in Estes Park as well. Check it out - I highly recommend it!

most "ski" resorts offer a ton of other activities. Right now you can go hiking, river rafting, fishing or enjoy all of the summer/fall concerts, and fairs. In the winter you can do snowshoeing, sleigh rides, shopping, hot springs.
And then all year round there is gambling in Cripple creek, Black Hawk and Central city. ( I like Cripple Creek)
Denver has a lot of Ballet, theater and performing arts events too! Lots to do!!!
