It's called "Hoe-Down" and it was composed by Aaron Copland.

...but Emerson Lake and Palmer do shred on it in their own right...

It's a cover of Emerson, Lake and Palmer's "Hoedown", which is basically an arrangement of something originally called "Rodeo".
