Since you've gone = You've already done it, and are no longer going.

Since you've been going = Currently still going to someplace.

I think "since you've gone" is past tense.
"Since you've been going" is present.

"Since you've gone", can imply once or multiple times

"since you've been going" only implies multiple times.
