Sodium Carbonate and Bicarbonate of Soda can both be used in cooking...They are different in composition which is why one is used more in cooking than the other..Assuming they are the same is akin to assuming that sodium hydroxide and sodium chloride are not different...Sodium Carbonate is a sodium salt of Carbonic acid with the formula :Na2 Co3.......Sodium Bicarbonate is a white crystalline solid that often appears as a white powder, with the formula: NaHCo3.....They differ therefore in composition, and the bonding configuration. However, sodium carbonate is used in german cooking for lying..i.e. used in place of sodium hyroxide to make pretzels more brown...and also in lye rolls...It is used also as an electrolyte, as in the case of the cleaning product due to its very effective conductivity..because its a salt....Its not advisable to use sodium carbonate in place of sodium bicarbonate as they have different properties so whilst being edible...one shouldn't stretch one's luck as they are both irritants....this is why baking powder is used in such little quantities when cooking..it irritates the respiratory system in larger quanties . The reason it is used for baking instead of sodium carbonate is because of the presence of hydrogen in sodium bicarbonate which enables baked goods to rise when heated.
