Since I play a little of all those genres.
20 years of experience here...

I'd honestly have to say Jazz & Progressive Metal are the hardest because they both have such complex and complicated time signatures and grooves in them.
They are like little movies...you never know where the plot is going to and how it's going to end. There's always a surprise in the middle too....=) I hope that helped a little.

Definately Ska or Metal. Depending on the Ska though. If it's the fast paced kind like what Streetlight Manifesto plays, then it's quite difficult, but if it's slower Ska like No Doubt, then it's not too hard. Overall I'd say some types of Metal.

Some sick drumming bands are:

Rush (best drummer to ever live) - Classic rock
Dragonforce - Metal
Streetlight Manifesto - Ska
Rufio - Punk

I would say latin/jazz with metal coming in behind in second. Latin/jazz usually has to have a certain unique feel to it that isn't easy for anybody to do. Metal is in second because you have to bang away fast and not hit anything wrong.

I would have to say jazz or fusion. The reason being is that you may have to change your time signature numerous time throughout the song. They are usually not easy changes. like 4/4 to a 7/8. tricky stuff.

It really depends on the song. There can be intricate jazz songs & simple rock song and vice versa. Jazz & Latin songs can be the toughest when the tempo keeps shifting around, and it sounds like several different songs spliced together.

Ska is pretty hard. You have to keep the beat, no matter what. You can't get off or else you'll mess up the entire song. Also, it's the main instrument in songs so you have to be good.
