I've had that problem with my Sulcatas. They didn't want to eat their greens, so I bought a small $10 food processor at Wal-Mart. I used it to chop up the greens, and I added what my Sulcatas loved to it, such as corn or apples. They couldn't pick out what they liked, but they smelled what they did like, so they ate it all. This mixture also made it easy to mix in calcium powder. Now they eat all of their greens, even if that's the only thing I give them, since they got used to eating it.

You can also make a puree of their favorite fruit and use it as a "dressing". Put the fruit in a food processor and add a bit of water, blend till its like a sauce. Pour over the greens/vegies. You don't need much.

prepare a container filled with water, add in fish oil or shrimps in the pail of water, then soak your veggies in the container with the oil or shrimps ( as long as you feels that the smell is strong enough) like 30mins to 45mins later, you can drain out the water and feed your tortoise with the veggies. Your tortoise will eat it as it has smell on the veggies

what I did is I bought turtle treats(dried shrimp work best) and get them used to eating that first. then take the treat and put a little peice of lettuce on it. then start giving them lettuce first then a treat afterwards. they will eventually get used to all veggies if you do this method with every other one. you then might be able to figure out what his favorites are.
