I have an old Zenith Data Systems Z-Note 325L. I have seen places that sell the adapters, but they are rather expensive. Is there any way to make or modify an AC adapter to work with it? Machine is pictured here: http://www.zdsparts.com/images/znote32f.jpg

I don't need a charger, just an adapter

YES of course, but if you are asking here, chances are you might just ruin that laptop with your "experiment".

The adapter is also a charger, an adapter won't work as well. However if you only want to as an adapter without charging the battery, then an adapter with the proper connector, voltage, and current will work. Do you know what they are?

Be careful with that, it might cost you more then what it is worth.
If it is not done correctly, you might burn out your power supplied in your laptop. Better off spend the money and get the right one.
Look around on line and do a search. I found good price for products I need quite often thru search. Reason I know I tried to fix my power adapter, it work at first and later burn out my power supplied. You can try your luck, maybe better than mine.

If you find out specs on the output voltage on the power supply....and which plug properly fits the laptop...then yes you could.
