I like Grace or Gabrielle. I wouldn't want to give my baby the initials OB.

I had a little girl last week and named her Daisy Grace. Absolutely fell in love with the name now, but was planning to use Jasmyn Emily or Scarlett Alysia. Turns out she looked like a Daisy Grace and it suits her down to the ground. Most rewarding thing you could ever do, so make sure you give her a name that she can use for a lifetime. Olivia Breelyn is cute, a unique name is appropriate for a middle name
Olivia Gabrielle is very pretty and flows well
Olivia Grace, Grace is over used in my opinion
Best out of the three is Olivia Gabrielle

Well, middle names are also a good way of honoring someone in your family like your mom or grandmother, so you should consider that as well.
Also, you need to consider what the initials will be.
Lastly you didn't give a last name, so hard to tell what would sound best with that. I generally would not suggest picking a middle name that starts with same letter as the last name: for example Olivia Gabrielle Gilbert is probably not great.
Anyway, I like Grace the best in the choices you gave.
