Two reasons. The first is so they don't have to mop up after you. But the second is purely for liability. They don't want some drunk person doing anything stupid that puts other people's good time or life at risk.

While it might seem like a good idea when you're drunk, the reason they want you sober is insurance and liability. If you barf, they have to clean it up and if your stuff hits another person, now they're in the hot seat for cleaning bills and lawsuits. Also, when you're drunk, you are not in control of your actions. What if you unbuckled your seat belt and decided that you can fly? There goes the show for them and a huge lawsuit to boot. Think about it and sober up before you go.

Insurance reasons. They need to take reasonable care to insure that everybody has a safe and fun ride. An intoxicated person is far less likely to obey the safety instructions and try to slip out of seatbelts and safety harnesses to get a bigger "thrill" out of the ride. Not to mention liability if an intoxicated person, due to the intensity of the ride, vomits on another guest.

Because I'm sure that is something they have to do for insurance liability purposes, just in case your drunk & do something stupid. That and its their ride they don't can have pretty much any rules/policies they want. Maybe they don't want drunk people who puke on their rides.

I'm guessing they want to minimize the number of people vomiting over their rides for their employees to clean up. Being drunk makes people more likely to vomit.

Why? Safety, yours and the other riders. The fact that you'd get sick and they would lose money because they'd have to shut down the ride while they clean it. And if you'd get injured you would be suing them.
If you have to be drunk to have courage to go on the rides, don't go, it's not worth it.

There may be safety reasons as well and management may want to prevent the other visitors from dealing with an obnoxious or rude person under the influence.

To be honest, they don't want to have to close the ride and clean up vomit.

Because someone who is drunk has no common sense and could be a danger to himself and others.
And, if he/she vomits,.........well, enuff said.
