I have a leather jacket (belonged to cousin) for riding my motorcycle. It is perfect arm length. Only issue is he was slightly "bigger bellied" then me...but not by much.

Is it possible to attach adjustment straps, (leather with metal clasps or Velcro, etc) to the leather jacket? If so, what would you recommend and how would I attach it? Thanks a ton.

Take the jacket to someone who Sews Leather (shoe repair, upholstery, saddle maker), if you have to have an attached belt.
However, any one and a half inch or wider belt will work just fine. (Fanny pack, Sabergear, Belt to carry water bottle, camping belt strap) Lots of the newer jackets have adjustment buckles at both side seams or have pleated leather at the waist.

Leave room Under the jacket for insulating clothing when the weather changes: insulated underwear, shirt, sweater/ windbreaker.

Most guys will Grow into their jackets. Why do you think those vests with all the patches have chains across the front? Ha, Ha!

Why not take it to a seamstress, they would be better qualified to answer this. I sew alot and have thought about how you might do this and right now I dont have a clue.

Dont do anything to the jacket unless you are sure about what you are doing, I would hate to see you mess up that great leather!!!!!!

I'd go with the Velcro fastener. In that way, you can adjust the belt when you want. If you can get a Police/Fire supply catalog (Gauls), they have Velcro duty belts, and one of these might work.
