A restaurant that uses good oils and ingredients will alweays smell good - the smell is the combination of the Maillard Reaction - the browning that takes place when meat and other commodities are roasted or shallow-fried or sauteed, with an admixture of the aroma of good oils and butter.
One of my much-demanded specialities is the saute potato. This cooking process invokes the Maillard Reaction. My friends tell me that even my beard smells like a restaurant, so I rest my case.

It is simply the smell of a clean, well kept restaurant where as much of the food as possible is prepared on the premises, fresh, daily. You can't mimic that smell, so you know you're in a genuine, well run restaurant serving good food.

Well you don't go to a restaurant unless you are hungry...and just the smell of cooking food makes you salivate....I love the smell of cooking steak..one particular restaurant I go to do delicious steaks and even as you get out of the car you can smell that delicious smell....Mmmm...so I think its steak.
