Imagine meat on a slab is being cut by the butcher and put on display for sale. On the slab means available, so would be there for courting or dating.

I think this must be their own version of things. The well known one is:
Urban Dictionary: on the slab
The slab is a slang term for an autopsy table. Being on the slab would be a slang
term for somebody being dead. Used in "Silence of the Lambs" by Hannibal Lecter

I, too, have never heard this expression (it may be antiquated), but from the context, it is obvious that it means that she is back in circulation (available to date) again.

That's a really obscure expression, I've never heard it but from that context it means that she is available to date, she is single.

I don't know exactly, but Urban dictionary says it means she is dead.
However, I believe it means that she's available or something like that.

As an English, English speaker I have never heard that phrase before.

She is free to date again. Being that the father said it and many father say things to there son they shouldn't. It may mean she is sleeping around. Some word do not have one meaning. English confuses us too.
