Ah you don't pay attention to the news. Cellulose has been and is being used as a dietary supplement in China. Street vendors sell "rolls" that are made mostly of old cardboard.

People can't digest celulose. I think celulose can be treated to convert it to starch (which people can digest) but the process might be too expensive, or the stuff tastes like crap, or maybe toxic byproducts, or some other reason for not being commercialized.

Most people are not real enthusiastic about the concept of chemicaly-systhesized food made from such things as saw dust, bagasse, cotton linters, old newspapers, and the like!

Human body does not have cellulase to digest cellulose like the cows do.
