how do moderate jews deal with that?

Very easily since we actually UNDERSTAND what is written there, the context and exactly what is meant to be learned from each instance. The fact that you don't- well, thats your issue, not ours.

They ignore the parts that are non reasonable or appropriate in modern civilized society -- just like they ignore the parts about killing anyone who works on the sabbath, or killing anyone who wears clothing made from two different types of cloth.

Almost all religions contain parts that call for irrational violence. It's only the very small percentage of fanatics that actually try to apply those principles in modern society.

Judaism is also one of the older religions -- almost 3x as old as Christianity, and about 8x as old as Islam and most of the Christian denominations -- they've had more time to grow up and become rational.
