my auntie just brought us about 15 over-ripe bananas..
and we don't want to eat them raw because no one in my house likes over-ripe bananas..they are too sweet!

any good recipes? (vegan). besides a bunch of fruit smoothies!

Banana Split Cupcake (Makes 12)
1/2 c. pineapple preserves
1/2 c. very ripe banana, mashed well (the darker the better!)
1 1/4 c. all purpose flour
1/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
1/3 cup canola oil
2/3 cup rice milk
1 1/2 teaspoons vanilla extract
1/2 teaspoon almond extract
1/4 cup finely chopped dark chocolate
1. Preheat oven to 350 degrees, line muffin pan with paper liners
2. stir pineapple preserves in a small saucepan over low heat till melted and they pour easily when scooped, remove from heat and set aside.
3. push trhe mashed bananas through a sieve or blend for a few secons with an immersion or regular blender to get rid of any remaining lumps. it should be fairly smooth.
4. sift flour, baking soda, baking powder, salt, and sugar in a large bown and mix. in a spearate smaller bowl whisk together the oil rice milk vanilla almond extract and masched banana. creat a well in the dry ingredients and fold in wet ingredients mixing to just combine - don't over mix.
5 fill liners 2/3s full. top the batter of each cupcake with 1 tsp of melted preserves and 1 tsp of chopped chocolat. with a small knife carefully stir each cupcake two or three times to swirl in preserves and chocolate. bake for 20 - 22 minutes till inserted toothpick comes out clean. cool completely on a witre race before frosting.
Frosting : Vegan Fluffy Buttercream Frosting
1/2 cup nonhydrogenated shortening
1/2 cup nonhydrogenated margarine
3 1/2 cups confectioners sugar
1 1/2 tsp vanilla extract
1/4 cup plain soy milk
beat the shortening and margarine together until well combined and fluffy. add the sugar and beat for 3 minutes add the vanilla and soy milk, beat another 5 to 7 minutes until fluffy.
add any vegan ice cream sundae toppings you'd like!
