You could pick up a Buell Blast 500 single cylinder. They are great handling and you can buy a 2 or 3 year old bike under $2 thousand . EBay has good buys on small displacement bikes, just look and get an idea of what you like.

Kawasaki EX250.

its smaller than what you want, but I doubt you have taken a safety course if you are asking this type of a question here.

all of the schools in my area use this bike for two reasons:

first, and foremost: it fits the criteria for a beginner's motorcycle set forth by the Motorcycle safety foundation (MSF).
second: the bike has not dramatically changed since the early eighties, so replacement parts are easy to come by. this is one of the few bikes today that can take a lot of abuse, and still handle like the 250 Gran Prix Champion that it was in the eighties.

I got everything I needed, the bike, insurance, and the safety course for just under $5,000, and I have more fun on my bike than my friends with much larger bikes, I never tire of their faces when I pass a GXXR or an R1 in the twisties.

The Buell is not a bad idea at all, great bike, but a Suzuki gs500 or ninja 500 may be a bit more reliable. Whatever you do, be careful with flEabay. It's possible to find a good deal, but its also easy to get screwed. When you're buying a used bike, how it was broken in is crucial in how long the bike will last, and it can be a lot harder to get that kind of information. Do your research, you'll be fine. And take an MSF course, its well worth it.
