The Easter Bunny, Oryctolagus Cuniculus Paschalis, is one of the very few mammals that lays eggs.
Due to the extremely high cocoa content of the Easter Bunny's diet, the 'shells' of the eggs are in fact chocolate.
This started when the species evolved on Easter Island, probably circa 20,000 years ago.
(There are no longer any Easter Bunnies in the wild, all that remain today are bred in captivity).

Rabbits and eggs are both symbols of the fertility goddess Eostre/Ishtar/Ostara. Her symbol is also the moon, in which some cultures see a rabbit instead of a face. Eggs also symbolize the moon and are the ultimate symbol of creation and new life. The basket is a symbol of the womb in which this new life is carried.
There's a legend that Eostre once turned a bird into a bunny to amuse some children, and it laid eggs. Chocolate items make it a gift easy to give to each other, and by consuming it we take the symbolism into ourselves.
The feast day is pagan and was widely celebrated way before the time of Jesus. Like pretty much all holidays, it was adopted by Christians to help get more converts. However, since the point is to celebrate new life and the hope of continuance, Christian symbols of a Resurrection day and the old pagan symbols mean the same thing. Just like Christmas, we are all celebrating the same thing, just using different symbols.

Oh but the bunnies don't lay the eggs, they are just the delivery guys! chickens still lay eggs, not sure who makes the chocolate ones...and then the Easter Bunny and his helpers are contracted out by FedEx I think, or UPS to do the deliveries. It's a rough schedule finding every Easter Basket in the world on a Saturday night.

It is well known that only Easter variety of bunny can lay eggs and they are chocolate.
However, even easter bunnies give birth to their offspring, this is not done via eggs. Birds have thier offspring by eggs.
It is not known exactly how this is done, but is beleived to be based on the same magic that allows reindeers to fly.

First of all, Rabbits cannot lay eggs. Does a Dog lay eggs? Does a Cat lay eggs? It is ridiculous to think that a Rabbit can lay eggs.
Easter is a pagan holiday. The coloring of eggs, bunnies etc are all part of a pagan tradition. Easter is the name of the pagan goddess of spring.
Everything about this holiday is pagan, and no it has nothing to do with the death and resurrection of Christ.

Because chocolate eggs sell better than anything else that could really pop out of a rabbit.
