Geometric figures are used to simulate real world objects so they can be studied and to determine their properties and usefulness.

A simple example is the rhombus. Geometrically, it is proven on paper that the diagonals are always perpendicular to each other. This led to the invention of the certain car jacks that have the horizotal diagonal threaded so that turning the diagonal causes the jack to raise vertically and not on a slant.

If I draw a picture of a suspension bridge and note that the towers are perpendicular to the Earth and that the cables form catenary curves, etc. what is the difference between the picture and the real bridge?

You may as well ask what is the the difference between a picture of yourself and your real life image in a mirror.

Real world objects are three dimensional, having only length, width and depth.

Geometric figures are 2-dimensional, as they only exist on a plane. Think of a plane as a piece of paper, which is where you see most geometric figures.
