There's a lot of great RPG games for the PS2, and if all else fails, check out some of the PS1 RPG's, some are among the highest ranked of all time.
.hack-its a hit or miss. I enjoyed the series (the first arc-4 part game series). I haven't played the second series yet but its an interesting series but it has its flaws. (I'd recommend renting it before buying)
Dark Cloud2-This is easily one of my personal favorite RPG's for the PS2. It has a little bit of everything, minigames, a great battle system, a beautiful soundtrack, its certainly one of the best RPG's on the PS2.
Dragon Quest VIII-Made by Enix (the company that merged with Square) its a really well done series (in Japan its more popular than Final Fantasy). Its great if you like old sytle RPG's and RPG's that will stay in your PS2 for at least 80 hours, and probably a lot longer.
Star Ocean III-another great game by Enix, it has a plot that twists at every turn and the battle system is very different. Great cast of characters and an RPG with depth.
If you're looking for good RPG's for the Xbox, I recommend:

+Fable (Xbox)
+Blue Dragon (Xbox360) made by square-enix

I suggest Dragon Quest 8. it's created by Square-Enix (Final Fantasy creators) and Level-5. It's a great turn-based Rpg with a fun storyline. If you like action RPGs, I also suggest Dark Cloud 2. This game has a good fighting system, cool weapon evolution, and some interesting minigames. Dragon Quest 8 and Dark Cloud 2 are two of my favorite RPGs, after the Final Fantasy series.

I'd suggest .hack (a four-part series; Infection, Mutation, Outbreak & Quarantine) or Star Ocean: 'Til the End of Time. These are my two (well, technically five) favorite games on the PS2. Definitely worth a look.
