These are some possibilites:
1) insecure
2) socially unconventional personality
3) this is an isolated unique habit or one of her few isolated habits
4) her thumb hurts
5) mentally challenged or mentally ill
6) she does this as a coping mechanism
Other reasons are plausible though!

The lady has a problem. An instructor of yours, you say? Well, I would observe her. Something is missing from way back (decades ago) in her life. Remember this, What shall we then say to these things? If God be for us, who can be against us? - Romans 8:31. The Lord daily loadeth us with benefits, even the God of our salvation. Selah. - Psalm 68:19.
When you enter a home or public building, quietly say "Peace Be To This House." - Luke 10:5. Those who reside on those premises for habitation or business, will be more peaceful. This will contribute to your peace of mind as well. For constant protection, read Psalm 35 (Plead My Cause) for protection against that which is known and that which is unknown. Put God first and you will never be last.
Peace and God Bless.

For every one adult you see sucking their thumb, there are probably over 40 you'll never see.
I'm actually surprised that thumb sucking in adults isn't more acceptable and popular than it is as it's a habit that's free, legal, convenient, quiet, without calories or drugs, aids in concentration and sleep, is non-intrusive and, for the great majority, doesn't affect one's health much if at all.

Its a nervous condition that is a lot like why people obsessively eat, or even smoke. It is a combination of a nervous condition and habit mixture.

It's probably soothing to her. I have ticks like that, too. When I get nervous, I play with my hair. It's super annoying but I just can't fight it!
