You know when you go to subway or somethin.... the waiters there always handle breads n stuff wearing plastic gloves.... It has somethin to do with hyigene but they open and close microwave doors and clean the counter tops with the gloves still on and then continue to handle the food... whats the deal?

The gloves are supposed to be for hygiene. They are ment to protect you from germs. Although they are not used properly sometimes. Sad to say.

It's the result of incomplete and inappropriately applied sanitation courses. You're right, they aren't supposed to touch anything but the food with those gloves, not the cash register and back room door handle and all that that you see them handling. The way these places are staffed is partly to blame. With a team of two or three people, the person wearing gloves should be able to do nothing but work on the assembly of sandwiches, with the other taking care of transferring it to the microwave, etc. But most time, they are short staffed and one or two people are scrambling to do it all. I have seldom seen a Subway that was adequately staffed to make sure the plastic gloves sanitation measures worked as they were supposed to.

Except for handling raw food vs cooked food, the gloves are supposed to keep their skin and oils from your food. Many diseases are transmitted by the secretions of the skin, so even though its not absolutely sanitary, it does give people a level of protection from biological contamination. There are certain things they are suppose to do like wash their hands and change the gloves, but if the boss doesn't buy enough gloves, most likely the employee isn't going to care enough to buy his or her own. You should mention to the owner of that particular restaurant that you are concerned and maybe they will do something.

When handling food it is more hygenic to thoroughly wash your hands .. gloves tend to leave more mess and germs in a commercial kitchen environment

Doesn't matter to them if it really works...just has to look like it helps and that they are trying to do their part. Perception is EVERYTHING.

skin secretions? wtf? thats called sweat, salt and water. Germs on the surface of our skin from touching something contaminated with that germ and then touching food is how.
