Any liquid body will try to minimise its surface area and a sphere has the smallest surface area for its volume. While the earth is quite rocky it is still behaves like a liquid to some degree.
The earth is actually an oblate spheroid being larger at the equator due to the rotation.

Anything that has a substantial amount of mass to it will have enough gravity to cause a mostly spherical shape.

Basically, the reason is the same reason all the planets and stars are spherical, because they have a substantial amount of mass and therefore the gravity.
