I have receipts from my school, like for textbooks, and im scared that the ink will go away which it will. So im hoping that highlighting the receipts will help to preserve the ink for tax purposes. Do you think it will work?

If your receipts are printed on thermal paper, even highlighting won't prevent fading. You have to write over the print with a ball-point pen before it fades and you don't need to highlight after that. Alternatively, you can fit a few into an A4 size and photostat the whole group. The photostated page shouldn't fade. If your receipts are printed on ordinary paper, it's unlikely to fade.
