Yes they will fight and is in fact why they were bred. Here is a really wonderful page that goes into much more history behind the species and the fish fighting that still goes on in Thailand today.

EDIT: Thank you to Magic for saying some things that I chose not to. You are right on about how wrong it is to use them for actualy fighting. I will not personaly butt into the Thai culture that still practices this today and tell them they are wrong as they have their reasons (or think they do), but I do not think it is a morally correct practice and it is cruel to the fish. I only hope that this is not your reason for asking.

True fighters are available out there, but just as with the fancy finned fish you find at pet stores, there are strains that much of the fight has been bred out of them. If you are actually looking for fish to abuse by allowing them to fight, I would ask you to reconsider as it is cruel and inhumane.

As to the quality and reliability of the breeders claims, you will have to measure that against the fact that they are obviously bad people that prefer to abuse animals when you try to decide how likely they are to lie to you to make a buck.

If on the other hand you are just looking for fish that look like the wild Betta splendens and have no plans at all of fighting them, there are quite a few members of the International Betta Congress that offer them for sale and like all other quality breeders, they have the appearance of wild plaket Bettas, but some of the fight is bred out.
