Taken 8 AP classes, and got college credits for all of them
I'm in 4 clubs, two of which I started on my own, one of the clubs I'm in is National Honor Society
I play Soccer
I volunteer at Church, homeless shelters, etc. about 3-4 hours per week.

So what are my chances of getting into Harvard, Princeton, or other Ivy League's?

OK just a correction I have gotten 2 B's in high school, and the GPA I gave is unweighted GPA
MY weighted GPA (which takes into account the 5.0 that AP classes give) is 4.356
Also my SAT score in Math is 780 and reading and writing in the low 700's. I am retaking the test Oct. 6

sounds pretty good so far. As long as have good SAT scores and such you should be good. If you go to the colleges websites it will show you what incoming freshmen last year had last year.

You should try to take more AP or IB classes in Junior and Senior year to improve your chances. If you take a few and do well then you may have a sporting chance at Swarthmore. Ivy leagues might be a little difficult but not impossible. But there are many colleges that are considered to be as good as Ivies that you can get in fairly easily. I suggest you read the classic "Colleges that change lives" book that Loren Pope has written. The colleges mentioned there are as good as the Ivies (according to some people) Good luck!

This is really hard to say without your SAT scores. If you had a rigorous schedule and did well on your SAT, you have a chance, although it is never a sure thing, and I assume that if you had 8 AP classes but only a 4.0 GPA, you got B's on a large number of classes, which doesn't bode well.

Your academic achivements are commendable and will probably look good to Ivy league admission comitees, but what is your SAT score? and SAT II scores? These scores could make or break your chances of getting in

As long as you do REALLY good on the SATs, you have an excellent chance! But, you seem to be doing excellent, so I'm not worried about you failing it :D
