Think of the negatives as money you owe someone (have borrowed), then

you already owe your parents $8 then you add another debt of $3 (ie borrow more money), so you now owe them a total of $11.

or,

you are currently 8 miles from home (-8) then travel another 3 miles further (adding -3) so you end up 11 miles away

You spend $8, and then you spend another $3, so you have

-$8, then -$3 less than you started with, and that is -$11.

It was -8 degrees and then the teprature dropped another 3 degrees so it became -11 degrees.
