I currently have a geforce 6800 thats getting out dated with newer games like Flight Sim X and Rainbow six Vegas. Should i get more RAM or a 8600? Which would help? Is the 8600 enough? I have a gig of ram now...

Your 6800 is a powerful card that is pretty outdated on the video side. Its memory bandwidth is comparable to that of the 8600GT. 8600GT will just bring you up to DX10 and SM 4.0 but not give significant improvement in games. X1950 Pro gives better performance but it is only a DX9 card. Better find a good deal on the 8800GTS.
2x512Mb (on 2 channel mode) is fine in XP. 2x1Gb is fine for Vista.
Your set up is fine for many games except Oblivion and Crysis. Consider overclocking cpu and gpu. You might gain 10-20% more performance and perhaps postpone your upgrade until you find a nice deal on a new DX10 card.

the CPU is fine.

It would help to know how much RAM you have. It also might be the BUS SPEED of your ram that is to blame (eg. 533 MHz could easilly get upgraded to 667 or 1024mhz or higher nowadays)

For Slight Sim X and future vista games I do certainly recommend an 8 series nvidia card - the 6 series does not support Direct X 10.

Get another gig of RAM, man. And Vista if you don't have it. (Unless that thing is a Mac. Lucky you if it is.)
