the oldest fruiting trees, the angiosperms, are 125 million years old (from so called evolution dating) there are tree fossils from 25) million years ago (gymnosperms, ie. Gingkoes). Bottom line, at a minimum we should find angiosperm tree fossils in ALL same strata as dinosaurs, which were living longer than 125 million years ago, right?

Since Darwinist themselves use the excuse, that the fossil record is very incomplete. Your question has no merit.
Then you ignore that the processes for determining the age of fossils, is always debatable, even among evos themselves; you error is componded.

Many Christians have been indoctrinated over the decades and coerced into believing the creationalist view of genesis by their peers. There is irrefutable proof of evolution through fossils. And all this co-incides beautifully with the bible and the creation story. They say you have to believe that the 6 days of creation were 24 hour days even though Peter says, "a day to the Lord is as a thousand years". Gen chapter 2 about the 3 or 4 verse states that "these are the GENERATIONS of the creation of the heavens and the earth" KJV. What is a generation? It's living things that sprang up from other living things. If you put evolution into the picture it also clears up some major problems with the Adam and Eve story like where's Cain's wife come from? And who were the other people he was afraid would kill him? The creation story is the story of the creation not only of this world and our bodies but of your souls. That's why in the garden we find the tree of the knowledge of good and evil and the tree of life.

Because God baked in carbon dating into the fossils.
You really can't ask Creationists to explain their theory using science, because they don't play by the "rules"...anything that science contradicts, all they have to say is "because that's how God created it."
Also, I should point out a mistake in your attempts to challenge Creationists...if you must do it, at least do it correctly.
Fossils are formed when a living thing is preserved throughout time. It is possible that a fruit tree was preserved as a fossil 10,000 years ago, and that an animal fossil was preserved 20,000 years ago. Because you've assumed that all fossilization began at the instant of creation, when in reality, carbon dating tells you when a specimen became fossilized, not when it originally appeared as a species.

"older" isn't a reliable term due to incredible inaccuracy in dating of fossils. There are many cases of unexpected finds in strata which, according to mainstream science, wouldn't hold these fossils- one example being a human-made artifact found within coal.
Certain areas of the world are more condusive to forming fossils than others and many conditions determine this. For all we know, there were hundreds of Unicorns living in prehistoric New Jersey but nowhere else in the world and none of their fossils lasted due to the geography.

The weakness in your argument is that maybe the dinosaurs ate grasses or some seaweed which are a good vegetarian meal and don't involve a fruiting tree.

Interesting answers thus far...I just wanted to share that a creationist once told me in regards to the fossil record "Fossils were put on Earth by God to test our faith." With logic like that, I wouldn't expect too many sensible answers...

They just sorted out that way into those strata as a result of the Great Flood, the one that Noah built his ark for.
Yup, totally bogus explanation. Don't you wish you'd asked this in the Religion & Spirituality section?

Just because the animal fossils are older does not mean that they are the OLDEST animal fossils. We undoubtedly have yet to find the oldest animal or any other kind of fossils.

Yes they can, its easy, God said so, and God can do anything. It says so in the Bible.
Reality is a different story, but you asked if they could explain it, and that is how they would explain it.

Let's think about this. Plants and trees are biodegradable. Bones last a lot longer.
