Or, can it withstand "heavy blows"?

depends really. If I'm happy I can stand up against anything. If I'm upset then I'll loose my confidence in an instant. But it also depends on whose saying it to me and what exactly they are saying.
I had a problem a few months ago with guys calling me their 'b1t**' and their 'hoe'. Tha just pissed me off but it doesn't hurt my confidence at all.
Another situation about a year ago my cousin and I had a fight and she said that she had always lied to me when she said that I was pretty and etc. etc. I lost all my confidence then but go it back the next day.
This is just the way I am. Though I am getting a lot more confident as I'm getting older.

You need to be on a dead broke horse that won't cause you to tense up. And as everyone else has stated, you need to explain to your instructor about the fall and lack of confidence. There are many ways of building it back up but that only comes with time in the saddle. Your instructor wasn't attempting to rub salt in the wound, chances are you're just overly sensitive because of frayed nerves. When she said your knees were terrible this was the straw that broke the camels back. Taking the lunging lessons will be very beneficial to you. You can work on yourself while having to not worry about being in control of the horse. This gives you a chance to relax while on the horse and settling yourself into a proper seat. If you're going to be tense, you may lean forward, you'll end up with a death grip on the horse without realizing it and it may lead to disaster. What you need to do is see this as a minor set back and keep your eyes on the goal: getting back in the saddle. There is nothing wrong with going back to basics at. all. It doesn't make you a terrible rider, it is merely a set back. Walk into the next lesson with your chin up, shoulders back, and force yourself to be confident and open minded. You are under instruction for a reason. There will be little and large successes. There will also be fall backs along the way. Take it all in stride and listen what your instructor has to say. Before you know it, you'll be confident again.

My confidence level on a 1-10 [1 being the worst 10 being the best] is a 2.

It used to get shattered all the time, but as I have become older I have realized that you cannot base your confidence on outside influences. It is something that comes from within.

There are still so many times when someone says something and I have these moments where I feel completely defeated, but I just have to tell myself, "no, you're not going to feel like this."

We all have that power. No matter what anyone says to us or about us, what matters more is what we tell ourselves.

It just depends on the kind of day I'm having and honestly, how good I feel about myself and my appearance that day. But the majority of the time, it is easily shattered.

Not anymore. In the past I didnt have an ounce of confidence but now I've become stronger. People are always going to say mean things that arent true. You just have to keep your head up.

I never have confidence in the first place.
But even if I am feeling a bit confident, it can still be easily shattered.
