When my husband (then my boyfriend) first introduced me to the concept of Caesar Salad, I didn't think I would like it because of the anchovies. He put all the dressing ingredients into a blender (egg, olive oil, anchovies, garlic, etc.) and blended it smooth. Then he coated the romaine lightly with the dressing and added really good crunch croutons and grated romano. One bite and I thought I was in heaven. You cannot taste 'fish.' The flavor is slightly salty and so very good. It has become my favorite salad!!!! p.s. Many people do not realize that Worcestershire also contains anchovies.

With...but gently does it. I like the idea of a little fillet draped over the serving too. Best Caesar salad, remembered fondly for umpteen years, was at Perino's Restaurant in Los Angeles...they made it at tableside with many a flourish, and the 2-minute egg cracked one-handed by the waiter and tossed in at the last minute to bind the loverly dressing with the greenery. Ahhhhhhhhh memory! Ahhhhh sourdough croutons & whooshes of parmesan....oh bliss!
