Adam Sandler has a lot of creative control in his movies, and I would guess that he does hand-pick most of the songs in his movies. Styx were very grateful for his choice of their music in 'Big Daddy'.
'Singles' and 'Rock Star' each produced some outstanding original and previously recorded music. If the Steel Dragon band had toured, I would have paid to see them.

Wow - what a fantastic question!
I love the Forrest Gump soundtrack (how could you not?!) but I also think that Almost Famous had a pretty amazing soundtrack, too.
Another favorite of mine - Singles. Now THAT was an awesome soundtrack!
Edit: Dave - THE CROW?! How could I forget the CROW?! That soundtrack absolutely ROCKED!

The Big Chill, definitely.
Adam Sandler is a great guy and my favorite actor. He helps to choose music since he usually produces his own movies. He even writes some of the songs.
A lot of people love the soundtrack to Iron Eagle and Footloose.
