I'm brushing on several layers...getting hard to sand all the brush strokes out

Part of the problem may be the particular type of brush you're using. I think that you'd want a brush "for acrylics" or just a fluffier type one. What type of brush do they suggest?

As for "decoupage mediums," most won't be clear enough if they're just poured on because of the thickenss, though I've heard that Plaid's Royal Coat is better in many ways than ModPodge if that's what you're using.

You could also use a clear acrylic finish for bare wood instead of a white-glue based "decopage medium."
You might be able to get away with pouring a deeper finish with that (just letting it set up as high as surface tension would allow) because it dries clear(but they always recommend a number of coats for the absolute *clearest* results, I think, perhaps due to the humidity in the air while drying?).

You could use resin if you want to pour.
