To digest fibre, the enzyme cellulase must be present to break down cellulose, which compose the cell wall. In our digestive system, we can't synthesis this enzyme. Thus, we can't digest fibre.
Fibre has a high water holding capacity and provides bulk to the intestinal contents, especially in the large intestine. This aids peristalsis which allows gut muscles to grip food and move ir along quickly through the digestive tract.

Even in the case of bovines (cows, buffaloes and such) the cellulose fibres are not digested by their own enzymes but by bacteria (for the type and other details check).
In our case fibres help in building up bulk and that facilitates movement. Also fibres add to the easy movement of stools through the system there by making elimination easy. Sticky stools and those low in bulk - non vegetarian diets are almost completely absorbed leaving very little residue, add to the problem of constipation. Fibres also help in making up what are known as 'formed' motion that gets eliminated clean as a whistle.

I just wanted to add something to the first answer which was quite good. Without the fiber, our digestive system doesn't have anything to grasp. It would be like trying to grip a pencil compared to gripping a roll of quarters. It is much easier to squeeze a roll of quarters.
