Space, even empty space, is curved and expanding. We are growing but every thing else is as well so we can't tell.

How do we see soooooooooooooooooooo much of it? It is so vast, our own galaxy is but one in billions. But the Milky Way alone is so vast that if our sun was the size of this, (.), a period, the galaxy in proportion would be the size of the mainland of the United States.

Space is an entity that permeates all of existence.
It also creates and supports all matter and every thing we experience.
It began as a single space-time pulse of minimum size and duration accelerated radially to the speed of light and has been going ever since.
Space is a finite entity so it has a maximum size,when it reaches the maximum size it will begin to go out of existence.

Most stars are formed in clusters, ranging from clusters of 2 (a double star) to clusters of up to a million stars (the globular cluster Omega Centauri)! Our Sun, a single star, is in the minority, since it stands alone!
