"Roll the Bones" usually refers to rolling dice - gambling.

(And the lyrics mention dice.)

Rolling dice links to luck and fate.

Beardo is correct. Roll the Bones refers to gambling and taking chances. It deals with fate & luck.

The overall message of the song, though is to get out there and take the chance ("so get out there and rock -- and roll the bones"). You make your own fate & luck.

If you listen to the other lyrics in the song, you should be able to deduce that they are saying to take a chance in life.
