Hypnosis is embellished greatly in the movies.
a) You can't put someone under hypnosis who doesn't want to be put under.
b) A person is only under hypnosis for a limited time. If you hypnotised someone and walked away, they would come out of it on thier own.
c) The person has to be fairly prone to suggestion to begin with
d) The person has to have a good imagination.

If you have a large group of people you can usually find 5 or 6 of them who will cluck around like a chicken, or act out weird scenerios. Basically they have fooled themselves into believing they are under hypnosis and that they will do everything they are asked to do. So they do.

Stop smoking and lose weight type hypnosis works by relaxing the person and convincing them that they are under a spell of sorts and will do what the person suggests.
Of course this is just suggestion, and mostly works because the person wants to quit smoking or lose weight enough to try hypnosis. Basically again, they are fooling themselves into believing that they were hypnotised and this will make them quit smoking.

The reality is that the only lasting effect of the hypnosis is the belief that the suggestion will be obeyed.

To get to the point, hypnosis is only real, if you want it to be real.

Technique: Use relaxing music, or sound effects (oceans, rain). Talk to the person in a soothing voice, and get them to relax each part of thier body individually. Have them breath slowly. Make suggestions that their eyes are getting heavy and that they are going into a state of deep relaxation and hypnosis.

Yeah, it is real. There are various types of hypnosis like conversational, which takes time, rapid induction, which takes few minutes and instant induction, which takes seconds (Believe it or not!). I personally prefer rapid induction as it takes less time and success rate is high. There 'Pattern interruption' and 'Shock induction' type of rapid induction. I use 'Pattern Interruption'. One such type of pattern interruption is the 'Hand Shake Induction' technique. For learning the technique, I would suggest you to watch and study each and every video you will find on the net. I learned it like that. And, practice on as many people as you can.
And of course, hypnosis works on good subjects. For a hypnotically good subject, he/she needs to-
1) Have a very good visualization/imagination
2) Have an average concentration level
3) Good IQ. The more the IQ, the better the subject.
But the most important factor is 'Imagination'. If the imagination is great, you don't have to worry about the other two criteria. Another factor that works for a good subject is his/her cooperation with the hypnotist. If he/she is not willing to be hypnotized or is not taking the thing seriously or is scared, then probably it will be hard to hypnotize him/her.
Thank you :)

Fortunately, it is possible to treat depression; regardless of the causes or the degree of the illness. One of the most effective ways of achieving this is through hypnosis. This involves use of imagery and suggestion so that positive change is achieved by the depressed people. A relaxed mental state is achieved as one follows the suggestions of the hypnotist. For instance, a suggestion can be made about you drinking a cup of tea. The depressed person will taste the tea and get the energetic feeling that one gets after taking any cup of tea. All this while, the depressed person is aware that the whole process is imagery and not the reality.

The American Psychological Association Division of Psychological Hypnosis provided the following definition :"Hypnosis is a procedure during which a health professional or researcher suggests that a client, patient, or subject experience changes in sensations, perceptions, thoughts, or behavior. The hypnotic context is generally established by an induction procedure. Although there are many different hypnotic inductions, most include suggestions for relaxation, calmness, and well-being. Instructions to imagine or think about pleasant experiences are also commonly included in hypnotic inductions. People respond to hypnosis in different ways. Some describe their experience as an altered state of consciousness. Others describe hypnosis as a normal state of focused attention, in which they feel very calm and relaxed. Regardless of how and to what degree they respond, most people describe the experience as very pleasant. Some people are very responsive to hypnotic suggestions and others are less responsive. A person's ability to experience hypnotic suggestions can be inhibited by fears and concerns arising from some common misconceptions. Contrary to some depictions of hypnosis in books, movies or on television, people who have been hypnotized do not lose control over their behavior. They typically remain aware of who they are and where they are, and unless amnesia has been specifically suggested, they usually remember what transpired during hypnosis. Hypnosis makes it easier for people to experience suggestions, but it does not force them to have these experiences."
The basic divisions of a hypnotic induction are relaxation, deepening, suggestion application, and termination.

It's "real" in as much as it can happen to some people. However, it isn't magical. You can't be made to do something against your nature. As with many psychological approaches to curing things like smoking, it will only work if you believe it will work.
