at the end of the summer when it's all brown and doesn't look good?
I am wanting to pull it out, but it's a perennial and beautiful in the spring and summer. It looks awful in my yard right now...what can I do with it? Thanks!

Trim it down and wait until spring to see it's beauty again....just like tulips/daffodils/croci.

You can cut it back a bunch, and the new growth will look a lot better. Make sure it doesn't have too much water, since that will cause it to yellow out from the inside. Next year, you might try planting some Moonbeam coreopsis next to it, they come up really late, so you'll just see the snow in summer all spring, and later on, the coreopsis will get bushy and fill up the space. Also, trim it back a little just after flowering.

I am cutting everything down to the soil line now. All of our gardens have finished and we are getting ready for fall.
Happy gardening to you.

Although eating it may have negative consequences, it could be done, I myself, would just wait until it melted and dried up, then sell it for fertilizer to unsuspecting southerners, who have never seen snow to begin with
